According to the Strategy for Improving Quality of Food Products in Russian Federation until 2030, priority area is development modern technologies production food ingredients and processing technologies, including biotechnologies create conditions new generation products with specified quality characteristics promote principles healthy nutrition. Thus research field creation, design formulations functional, enriched, specialized fish-based are developing. A special place occupied by nutrition athletes, diet balance which determined rhythm training process. It proposed use fish pastes increased biological value athletes.
